Life can get hectic and busy and before you know it, the weekend comes around and you are starting to plan the week ahead. Here are some easy ideas for Sunday arvo cooking or even to do one recipe per night so you have snacks for the kids lunchboxes sorted.

Banana & Pear Pikelets

Ingredients

200 grams Self Raising Flour
1 mashed banana
1 cooked mashed pear
2 Eggs
250mls Milk
25 grams melted butter

Method

  1. Mash the fruit in a bowl
  2. In a different bowl add flour and mix in eggs and milk, stirring to create a smooth thick batter.
  3. Mix in the mashed fruit
  4. Heat fry pan and spoon in mixture. Turn pikelets over when air bubbles appear. Cook until golden.

Beetroot & Chocolate Muffins

Ingredients

1/2 cup cocoa powder
2 cups self raising flour
1 cup raw sugar
1 cup canola oil
3 eggs
1 1/2 cup beetroot (pureed)

Method

  1.  Preheat oven to 180°C
  2. Place all ingredients together in a large bowl. Beat with a wooden spoon until combined
  3. Spoon mixture into prepared muffin and smooth the surface
  4. Bake for 1 hour or until a skewer comes out clean
  5. Stand for 10 minutes then turn onto a wire rack to cool

Easy Zucchini Muffins

Ingredients

1 1/2 cups zucchini grated
1 carrot grated
125 grams tinned corn
1 onion, finely diced
100 grams thinly sliced ham
1 cup wholemeal self raising flour
6 eggs beaten
1 cup grated cheese

Method

  1. Preheat oven to 180°C. Lightly spray muffin tin with cooking oil spray
  2. Cook onion in frying pan
  3. Mix all ingredients in a large mixing bowl
  4. Divide the mixture between 12 muffin holes
  5. Bake for 25 – 30 minutes or until golden and skewer comes out clean

Cheese Scrolls

Pastry

2 cups self raising flour
1 egg
3/4 cup milk
20 grams margarine

Filling

200 grams grated cheese

Method

  1. Preheat oven to 180°C
  2. Combine all pastry ingredients together using a bread and butter knife. If mixture is too wet, add a little more flour. Lightly knead dough on a floured surface.
  3. Roll out flat with a rolling pin, sprinkle with cheese, roll up into a sausage roll shape and slice into 1 cm pieces, place flat on lined baking tray.
  4. Bake for 20 minutes.

Healthy Strawberry Roll Up

Ingredients

1 punnet strawberries
1 teaspoon Natvia

Method

  1. Blend ingredients together until strawberries are pureed then pour onto a baking paper lined tray so it’s just a thin layer.
  2. Pop into the oven on 60°C for about 1-2 hours depending on your oven. When it’s all dried out remove from oven and let cool just enough to handle
  3. Carefully peel away the baking paper and cut into small portions. Approximately 4-6 servings per punnet
  4. Other combinations of fruit would work well too.
